How to make rainbow bagels

INGREDIENTS:



  • 500g strong white bread flour
  • 350ml warm water
  • 7g yeast
  • 1 tsp salt
  • 2 tbsps golden caster sugar
  • 5 food colours of your choice
  • 1 tbsp bicarbonate soda

METHOD:

  1. Mix the yeast and water in a jug and leave to the side for five minutes
  2. Sieve the flour into a bowl and mix in the salt and caster sugar
  3. Make a hole in the middle of the powder mixture and pour in the yeasty water into the hole. Mix the dough together with your hands
  4. Put flour on the table surface and knead the dough
  5. Using the tip of a teaspoon smear a small amount of food colouring onto the top of each of the five dough balls
  6. Kneed each dough ball individually, blending the colour in
  7. Place each dough ball into its own bowl with a drizzle of oil in the bottom, cover the bowls in cling film and wait for an hour until they double in size.
  8. Roll each ball of dough so that they are flat 20x30cm rectangles. Cut each in half and layer the different colours on top of each other
  9. Cut the colourful dough stack into five strips. Stretch each strip, twist it round and connect it into a bagel shaped loop
  10. Leave the bagels to prove on a baking tray for another 30 minutes covering them in cling film
  11. Boil a large pan of water and add the bicarbonate soda. Boil each bagel for one minute, turning them over after 30 seconds
  12. Bake the bagels at 160⁰C for 20 minutes. Leave to cool, then enjoy
