INGREDIENTS:
- 500g strong white bread flour
- 350ml warm water
- 7g yeast
- 1 tsp salt
- 2 tbsps golden caster sugar
- 5 food colours of your choice
- 1 tbsp bicarbonate soda
METHOD:
- Mix the yeast and water in a jug and leave to the side for five minutes
- Sieve the flour into a bowl and mix in the salt and caster sugar
- Make a hole in the middle of the powder mixture and pour in the yeasty water into the hole. Mix the dough together with your hands
- Put flour on the table surface and knead the dough
- Using the tip of a teaspoon smear a small amount of food colouring onto the top of each of the five dough balls
- Kneed each dough ball individually, blending the colour in
- Place each dough ball into its own bowl with a drizzle of oil in the bottom, cover the bowls in cling film and wait for an hour until they double in size.
- Roll each ball of dough so that they are flat 20x30cm rectangles. Cut each in half and layer the different colours on top of each other
- Cut the colourful dough stack into five strips. Stretch each strip, twist it round and connect it into a bagel shaped loop
- Leave the bagels to prove on a baking tray for another 30 minutes covering them in cling film
- Boil a large pan of water and add the bicarbonate soda. Boil each bagel for one minute, turning them over after 30 seconds
- Bake the bagels at 160⁰C for 20 minutes. Leave to cool, then enjoy
